Vegan Flourless Chocolate Cake

This vegan flourless chocolate cake is going to blow your mind. No eggs, no milk, no flour and the main ingredient is potatoes. And it tastes DIVINE. If you can’t leave home, have barely any ingredients, this is the recipe you definitely want to make.

PLEASE NOTE, this recipe is not like a standard cake. It’s more like a rich brownie. The higher quality chocolate you use the better it will taste. To help the cake be firmer, allow time for it to set in the fridge.

Here are some tips for this vegan flourless chocolate cake recipe:

  • You can use any type of potato or even pumpkin
  • If you allow the cake to set in the fridge after baking the texture will improve, I like this cake even better the next day
  • You can freeze this cake for up to a month
  • You can heat the cake up to give it a more gooey texture
  • You can use any vegan chocolate you have handly, even chocolate chips
  • You can add nuts to the batter for extra texture
  • Serve with my custard recipe
  • If you don’t have golden syrup you can use maple syrup or agave syrup
  • Make sure your potato has absolutely no lumps in it

Ingredients

Units Scale
  • 50 g cocoa powder (1/2 cup )
  • 77.5 g brown sugar (1/2 cup )
  • 1/2 tsp salt
  • 220 g vegan chocolate
  • 3 tbs vegetable oil
  • 3 tbs golden syrup (can use maple or agave syrup)
  • 2 tsp vanilla extract
  • 350 g potato puree (roughly 4 small-medium sized potatoes boiled then mashed until completely smooth)

Instructions

  1. Preheat your oven to 190C/374C and grease an 8IN/20CM springloaded cake tin.
  2. In a large mixing bowl, sieve cocoa powder, sugar and salt and mix with a whisk until well combined.
  3. Melt chocolate, pour in oil, syrup and vanilla and whisk until well combined.
  4. Add potato puree (make sure the potato is completely smooth) and chocolate to the large mixing bowl. Mix together on a low speed using an electric hand mixer until just combined.
  5. Pour into your cake tin and smooth out until completely flat and even.
  6. Bake for 50 to 55 minutes or until the top is just firm. It's still going to be quite soft.
  7. Remove from oven and allow to cool. Put in the fridge to set the cake for at least 2 to 3 hours. The cake will become firmer overnight if left in the fridge. Serve with my vegan custard recipe.

Notes

PLEASE NOTE, this recipe is not like a standard cake. It’s more like a rich brownie. The higher quality chocolate you use the better it will taste. To help the cake be firmer, allow time for it to set in the fridge.

The photo of the cake are taken after the cake had set in the fridge overnight. So don’t worry if your cake is slightly gooey in the middle.

This glorious gluten free vegan apple cake recipe is from my brand new cook book that is coming out in October. I wanted to give you a sneak peak of what to expect. This recipe is all about the gluten free flour mix, it gives this cake the most gorgeous texture, no-one will ever suspect it’s gluten-free. There are a few ingredients in this recipe but it’s so easy to make and you won’t be able to stop eating it.

Gluten Free Vegan Apple Glaze Cake

Description

An easy gluten free vegan apple cake that stays moist and delicious for days… 


Ingredients

INGREDIENTS
Egg replacer
1 tbsp ground flaxseed
2 1/2 tbsp boiling water

Dry Ingredients
3/4 cup buckwheat flour
1/4 cup almond meal
1/4 cup brown rice flour
1/4 cup cornflour or cornstarch
1/2 cup white sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp ground cloves

Wet Ingredients
1 1/3 cup soy milk
1 tbsp vinegar
1/4 cup veggie oil you can use melted coconut oil also
2 tsp vanilla extract

Topping
1 large apple
1/2 cup crushed walnuts
1/2 cup icing sugar
1 tbsp hot water
1 tbsp golden syrup


Instructions

HOW TO MAKE THE CAKE

  1. Preheat your conventional oven to 175C/347F. Grease your 6 inch round cake tin with vegetable oil, then line with baking paper and lightly grease with more vegetable oil. Then dust with a small amount of cornflour or starch. Tap upside down to release any excess flour.
  2. Firstly make your egg replacer, mix the flaxseed with the boiling water and stir. Set aside.
  3. In a large mixing bowl, sieve all your dry ingredients together and mix together with a whisk.
  4. In a large jug, mix your soy milk and vinegar together until it thickens. Add remaining wet ingredients, including your flaxseed egg, and mix together really well.
  5. Thinly slice your apple and place in a small bowl. Cover apple pieces with a tiny amount of your wet ingredients and then cover with a small amount of the dry ingredients. Put aside 2 tbsp of the flour mix.
  6. Make a well in the centre of your flour mix and pour in your milk mix. Gently mix together using a whisk until just combined. Pour into your cake tin and gently tap on the bench to release air bubbles.
  7. Sprinkle the spare flour mix over the top of the batter. Sprinkle 3⁄4 of the walnuts over the flour. Arrange the apple onto the cake starting from the outside and working your way to the middle.
  8. Bake on the middle rack in the oven for 45-50 mins or until a skewer comes out almost clean. Remove from oven and allow to sit in the cake tin for 10 mins before turning onto a cooling rack.

HOW TO MAKE GLAZE

  1. To make your glaze mix together your icing sugar, water and golden syrup until combined and pour over the top of your cake. Decorate with walnuts. Best served with icecream.

 

Notes

Store this cake in an airtight container NOT in the fridge as it will dry out.

Here is my no fuss gluten free vegan chocolate cake recipe. There are no weird baking ingredients, or special mixtures of 5 different gluten free flours. I baked this using generic gluten free flour from the supermarket. I’ve listed all my gluten free baking tips down below the recipe.
