I’m obsessed with gluten-free vegan chocolate cake recipes. I have developed quite a few gluten-free vegan chocolate cake recipes and I decided to make a version that’s the easiest to bake. This recipe is so easy.  It’s a 1-bowl (and a jug) cake that’s vegan, gluten-free, coffee-free and it’s absolutely decadent. It’s a fantastic choice for a birthday cake as it’s a double layer 8 inch round cake that measures 3.5 inches in height before piping.

This gluten-free vegan chocolate cake uses white rice flour, almond flour, and tapioca flour as it’s gluten-free flour blend. Our egg replacer is xanthan gum which is a great egg replacer for gluten-free baking. It works as a binding agent and also helps create a spongy cake texture, which is hard in gluten-free vegan baking. A combination of soy milk and water add a lot of moisture to this cake, as you generally see in other rich chocolate cake recipes. It’s not as dense as a mud cake but it is on the more heavy side without being too dense.

This is a really big cake so be prepared. I use two spring form 8 inch cake tins as you need the depth of at least 3 inches to hold the amount of batter. I use Jamie Olivers cake tins and I love them because they are blue. You will also need a large mixing bowl. I ended up using my mix master bowl as there is also of cake batter in this recipe. The cake should not sink in the middle and will produce a slight dome on top.

Gluten-Free Vegan Chocolate Cake Breakdown

Storage:Un-iced layers stored in an airtight container outside of fridge one to two days, once sealed with ganache, airtight container in the fridge for 3 to 5 days. It’s a very moist cake, so will take a few days to dry out
Bakers Tip:Use a high quality dutch-process cocoa powder for a more complex, smooth chocolate flavour. Add cinnamon for extra spice. Exchange 1/2 recommended water for liquid coffee to enhance the chocolate flavour. 
Vegan Gluten Free Chocolate Cake with Ganache

Tips For Making This Gluten-Free Vegan Chocolate

  1. Make sure your oven is heated to the correct temperature before baking, use an oven thermometer
  2. Use a vanilla bean paste for the best flavour
  3. Don’t over bake this cake, the skewer will still present some sticky crumbs when poked throw the centre
  4. Use spring form tins that are at least 3 inches in height, this is a big cake
  5. Use a high quality vegan dark chocolate (50 to 65% cocoa) for your ganache

Ingredient Substitutions

  • swap cocoa powder with Dutch cocoa powder for a smoother chocolate flavour
  • swap tapioca flour with potato starch
  • swap almond flour with almond meal or pumpkin seeds ground into a meal for a nut free version
  • swap soy milk with coconut milk for a soy free version
  • swap xanthan gum with 3 flax eggs

Description

This recipe is so reliable, super moist and it doesn’t sink when baked. The flavour is what you would absolutely desire from a chocolate cake.


Ingredients

Units Scale

Cake

  • 330 g white rice flour (1 3/4 cups + 2 tablespoons )
  • 180 g almond meal or almond flour (1 3/4 cups )
  • 80 g tapioca flour (1/2 cup + 2 tablespoons)
  • 170 g cocoa powder (1 1/3 cups + 1 teaspoon )
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon xanthan gum
  • 340 g caster sugar (1 1/2 cups)
  • 500 mls plain soy milk (2 cups )
  • 2 tablespoons white vinegar
  • 400 ml water, at room temperature (1 1/2 cups + 5 teaspoons )
  • 200 ml extra virgin olive oil (3/4 cup + 2 teaspoons )
  • 2 teaspoons vanilla bean paste

Vegan Butter Ganache

  • 450 g full-fat plant based cream, 35% fat (1 1/4 cups )
  • 750 g high quality vegan dark chocolate (50-65% cocoa), roughly chopped (3 1/3 cups)
  • 150 g vegan butter or margarine (1/4 cup + 1 tablespoon + 2 teaspoons )

Filling

  • 45 g flaked almonds (1/2 cup )
  • Pinch of sea salt

Instructions

Cake

  1. Preheat your convection oven to 165°C/335°F. Grease and line two 8in spring form cake tins that are at least 3 inches in height, with baking paper and grease again.
  2. This is a big cake and there is a lot of batter. In your largest mixing bowl, sift the rice flour, almond meal, tapioca flour, cocoa powder, baking powder, baking soda, salt, and xanthan gum. Whisk to combine. Add the sugar and stir through. Make a well in the middle of your dry ingredients.
  3. Add the soy milk, vinegar, water, oil, and vanilla to a large jug, stirring to combine.
  4. Slowly pour the wet ingredients into the bowl of dry and gently whisk to combine. It will be a runny batter.
  5. Pour the batter evenly into your cake tins and firmly tap it on your bench with force to release any large air bubbles.
  6. Bake on the middle rack of your oven for 55 to 60 minutes, or until a skewer inserted into the center comes out with just a few sticky moist crumbs clinging to it, and the top springs back when gently touched.
  7. Let cool in the tin for 10 minutes before releasing and flipping onto a cooling rack to allow it to completely cool before frosting.

Ganache

  1. Heat cream in a large, heavy-bottomed pot on low heat, until small bubbles appear around the edge and it starts to steam. You want to catch it right before it’s about to start to boil. Alternatively, you can heat in the microwave.
  2. Remove from the heat and add chocolate, making sure it is covered by the cream. Cover and let sit for 5 minutes.
  3. Stir vigorously using a whisk, until smooth.
  4. If there are any lumps, put the pot back onto the stove over very low heat. Stir until the lumps have melted and the ganache is shiny. Alternatively, heat in the microwave in short intervals whilst stirring in between.
  5. Add butter and stir through until smooth and creamy. Cover with plastic wrap and push it down into the ganache so it covers everything. Allow to sit for an hour to overnight on your bench until it has reached smooth slightly goopy American style peanut butter consistency. The amount of time it will take depends on your climate.

Filling

  1. In a fry pan, dry roast your almonds until they become fragrant and slightly brown. Season with sea salt and set aside.

How To Assemble

  1. Once your cakes have cooled, use a sharp serrated knife to level the tops of your cakes. They should be completely flat and exactly the same height.
  2. Place the bottom layer onto a cake board. Spread a small amount of ganache on top of this layer to seal it. Place your almonds on top of the ganache and gently press down to secure it. Dollop a few more tablespoons of ganache over the almonds and spread out evenly.
  3. Add your second layer on top with the flat bottom side facing up. Completely cover your cake in ganache and smooth with a cake scraper. Chill in the fridge for 20 minutes to completely set the ganache.
  4. Add 1 cup of your remaining ganache to a heat proof bowl and heat it on your stove top or in your microwave until it’s at a very runny consistency. Remove your cake from the fridge and pour over the top of your cake, using a palette knife to help it drip over the edges. Chill in the fridge for 20 minutes to completely set the ganache drip.
  5. Add your remaining ganache to a mix master with a whisk attachment and whip until light and fluffy.
  6. Using your piping bag with a large round nozzle, fill with ganache frosting. Remove cake from fridge and hold piping bag straight above your cake and pipe small round puffs with pointed tips. Repeat to cover the entire top of your cake.
  7. Using a kitchen blow torch, toast the sides of the cake until shiny; this should only take a second to achieve. Don’t toast for too long otherwise you will melt your ganache too much. Serve!

It’s berry season here. So I’ve created a very quick and easy vegan raspberry muffin recipe that you can bake in about 16 or so minutes. Great for breakfast or lunches. You can swap out any berries for the raspberries.

Ingredients

  • 210 g plain all-purpose flour (1 1/3 cup + 2 teaspoons)
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 25 g fine desiccated coconut (1/4 cup)
  • 115 g caster sugar (1/2 cup)
  • 300 ml plain soy milk (1 cup + 3 tablespoons)
  • 1 tablespoon white vinegar
  • 65 ml vegetable oil (1/4 cup + 1 teaspoon)
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon lemon essence or flavouring
  • 1 cup raspberries (frozen and thawed or fresh)
  • 3 tablespoon melted apricot jam

Instructions

  1. Preheat the oven to 180C/360F and grease or line with muffin cases 2 x 6 hole muffin tins.
  2. In a large mixing bowl, sift flour, baking powder, baking soda, and salt together. Add sugar and coconut and mix together well.
  3. In a large jug or bowl pour soy milk and vinegar in together and mix until it becomes thick. Add oil, vanilla, lemon flavour and mix together well.
  4. Make a well in your flour and in thirds, gently pour in your milk mixture. Gentle fold liquids into the flour with a whisk until just combined. Sprinkle half of your raspberries into the mix and gently fold in. Don't over mix. Don't worry if it's a little lumpy.
  5. Pour batter into muffin holes, filling 3/4 full. Add remaining berries to the top of your muffins.
  6. Bake in the oven on the top rack for 16-18 minutes or until a skewer comes out almost clean when poked into the middle of a muffin. The tops should bounce back when touched. If your muffins are really large, they may need 2 extra minutes to bake.
  7. Leave muffins in their pans for 10 minutes before removing them. Then move to a cooling rack so the bottoms don't become soggy.
  8. Brush tops with your melted jam to add shine.
  9. Store in an airtight container or freeze
 straight after they have cooled.

5 Tips To Stop Your Oven Baking Unevenly

My cakes were constantly coming out of the oven unevenly baked. It happened to me whenever I was baking in a gas oven – which is virtually all of the time. So, to combat this here are all my tips and tricks that I learnt to stop it from happening.

  1. Add a heat proof bowl to the bottom of your oven filled with water. The steam from the bowl helps the heat to circulate more evenly around the oven, creating a more even bake.
  2. Where possible use baking strips. Baking strips (or cake strips) provide insulation around the outside of the entire cake pan, helping the cake bake evenly on all sides. It also helps to create a flatter cake with fewer cracks on the top. Here is how I make my own https://youtu.be/gdg_FIZYS18
  3. Rotate your cakes 90 degrees 2/3 of the way through to help even each side. If it’s cookies or smaller bakes, you can rotate half way through.
  4. Understand where your oven’s hot and cold spots are so you can choose a better placement for your bake. A super simple way to do this is arrange slices of bread on a rack and see where the toast is darker and lighter to determined your hot and cold spots.
  5. Use 2 oven thermometers at either side of your oven. This allows you to know if your oven has completely pre-heated to the correct temperature and the best placement for your bakes.

Vegan Chocolate Cake

This vegan chocolate cake is rich, fluffy and moist. Perfect for birthdays, carving cakes and it stores well due to its great texture. It’s not heavy or dense like a traditional chocolate mud cake or dry like an overbaked sponge. It’s in between like a butter cake. Here are a few baking tips for this vegan chocolate cake:

  • You can bake this as a tall 6-inch like the photos or a flatter 8-inch size. If you bake in an 8 inch you need to reduce your baking time to 35-37 minutes.
  • For a great chocolate flavour, I recommend using a high quality dutch cocoa powder.
  • You can further enhance the flavour of this cake by adding a teaspoon of espresso powder or chocolate essence.
  • Spray or brush sugar syrup or water between the layers if you’re not eating the cake straight away or storing in the fridge. I do this regardless to add moisture to the cake.
  • Use canned unsweetened coconut milk for this recipe.

Description

No fail moist vegan chocolate cake recipe


Ingredients

Units Scale
  • 1 tbsp ground flaxseed
  • 2 1/2 tbsp boiling water
  • 200 g vegan butter or margarine (room temperature)
  • 200 g caster sugar
  • 300 g plain all purpose flour
  • 50 g cornflour or cornstarch
  • 100 g dutch processed cocoa powder
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp fine sea salt
  • 1 tsp cinnamon
  • 400 mls canned coconut milk (not low fat and unsweetened)
  • 50 mls boiling water

Instructions

  1. Preheat oven 160°C/320°F and line 2 x 6IN / 15.24CM cake tins with baking paper, grease with oil and dust with some of the dry ingredients when it's mixed together.
  2. Mix ground flaxseed with boiling water and mix together with a fork. Set aside so it can thicken.
  3. In the bowl of a stand mixer with a paddle attachment, cream together butter and sugar until creamy with no lumps.
  4. Sieve flours, cocoa, baking powder, baking soda, salt and cinnamon in a small mixing bowl. Mix with a whisk to areate and combined.
  5. In a small jug mix coconut milk and flax egg replacer and mix well.
  6. Add one-third of the flour mix very slowly and mix on lowest speed to the creamed butter, then add one-third of the liquid. Repeat until all ingredients are just combined. It will be a thick batter.
  7. Whilst on the lowest speed, trickle boiling water down the side of the mixing bowl. Mix until just combined.

 Divide between tins. If you want perfect layers, weigh the cake tins with batter in them. Tap tins on the bench to release air bubbles, bake 47 to 50 mins, check with a skewer through the centre, if it comes out almost clean it's ready.
  8. Let cool in the tin for 5 minutes, then flip on a cake rake.
  9. Level cake layers with a knife and brush or spray sugar syrup or water between layers to add moisture. This will help keep your cake moist for longer. Decorate with vegan whipped cream. I have a recipe for vegan whipped cream coming out next month.

Vegan Victoria Sponge Cake

Vegan Sponge Cake by Sara Kidd

The Victoria Sponge Cake apparently originated during the Renaissance and was a cake that relied on eggs. Traditionally eaten with a fruit jam and whipped cream, it’s a common favourite that is very easy to make vegan. The texture of this vegan victoria sponge cake is just as soft and fluffy as the non-vegan version. This cake keeps for around 3-4 days in an airtight container. Cakes tend to dry out quicker in the fridge so if you can leave it out, it will keep longer. Here are some tips to perfect this cake:

  • Make sure all ingredients are at room temperature. I microwave my butter and soy milk for a few seconds just to make sure.
  • Vanilla is the most important ingredient in this cake. I recommend using a vanilla bean pod or vanilla bean paste.
  • These cake layers are only 1 inch in height. They only rise a small amount but don’t worry the texture is superb. I don’t recommend using baking strips for this cake if that’s your general practice.
  • Use 2 cake tins for the best result.
  • Weigh your cake tins with batter in them to make sure each layer is the same amount.

The batter will be very thick. Don’t overbeat it. Only mix until just combined on the lowest speed.

Simple yet delicious recipe for a Classic Victoria Sponge Cake


Ingredients

SPONGE CAKE

  • 160 g vegan butter or margarine
  • 190 g caster sugar
  • 300 g all purpose plain flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 330 ml soy milk or oat milk
  • 2 tbsp vinegar
  • 1 tsp vanilla bean paste or seeds from one vanilla pod

JAM

  • 200 g raspberries (fresh or frozen)
  • 150 g caster sugar
  • 2 tbs lemon juice

BUTTERCREAM

  • 185 g vegetable shortening
  • 125 g vegan butter or margarine
  • 300 g icing sugar
  • 1 tsp vanilla bean paste
  • 1 tbs boiling water

Instructions

TO MAKE CAKE

  1. Preheat oven 160°C/320°F and line 2 x 8IN / 20CM cake tins with baking paper, grease with oil and dust with flour. You can also use a non-stick springform pans too.
  2. In the bowl of a stand mixer with a paddle attachment, cream together butter and sugar until creamy.
  3. Sieve flour, baking powder, baking soda and salt in a small mixing bowl. Whisk well to airate the flour.
  4. In a small jug mix milk, and vinegar together. It will slightly thicken the milk if you use soy milk. Add vanilla and stir.
  5. Add one-third of the flour mix very slowly and mix on lowest speed to the creamed butter, then add one-third of the liquid. Repeat until all ingredients are just combined. It will be a very thick batter.
  6. Pause mixer and scrape down sides and mix for a few seconds.
  7. Divide between tins, tap tins on the bench to release air bubbles, bake 30 to 33 mins, check with a skewer through the centre, if it comes out clean it’s ready.
 If you want perfect layers, weigh the cake tins with batter in them to make sure they are even.
  8. Let cool in the tin for 5 minutes, then flip on a cake rake.

TO MAKE JAM

  1. Tip the raspberries into a large saucepan, add sugar and lemon juice. Cook gently over a low heat, stirring occasionally until all the sugar is dissolved.
  2. Bring to the boil and boil vigorously for about three to four minutes. Keep an eye on it to make sure it doesn't burn and doesn't overcook. The bubbling will start to slow down.
  3. To check it’s ready, place a spoon in the freezer for a few minutes. Remove and add a small amount of jam. Run your finger through the middle (careful it’s hot!) and if the jam doesn’t flood to fill the hole it’s ready. Remove from heat and set aside.

TO MAKE BUTTERCREAM

  1. In a standard mixer beat shortening until soft, creamy and no lumps. Add butter and beat on medium speed until smooth and creamy. It should go almost white.
  2. Add icing sugar, vanilla and water and beat on low speed until creamy. If your icing is too soft, put in the fridge for 10 to 15 mintues. If you want a less sweet buttercream, check out my cream cheese buttercream recipe.

TO ASSEMBLE CAKE

  1. Place first cake layer bottom facing down. Spread jam evenly over the top.
  2. Add buttercream over jam. You may have some left over.
  3. Add other cake layer bottom facing up. Dust with icing sugar and serve.
  4. This cake will keep in an airtight container outside of fridge for 3 to 4 days. If you need to keep in fridge, I would add a simple sugar syrup between the layers to help it stay moist.

Vegan Coconut Cake

I’m so happy with how this vegan coconut cake recipe came out. Beautiful buttery moist texture with a sweet coconut flavour. The cake crumb is tight yet fluffy which makes it a great vegan cake for stacking. It keeps for 5 days in an airtight container out of the fridge. If you keep it in the fridge you need to add sugar syrup in between the layers to help keep the moisture in.

I used 3 x 6-inch cake tins for this recipe, however, you can also use two 6-inch cake tins too. Here are a few tips for this recipe:

  1. For perfectly flat layers use baking strips. Here is a quick video on how to make them. Just remember that if you do use baking strips you may need to bake for an extra 5-7 minutes.
  2. Bake your cake on the middle oven rack and make sure your oven has preheated to the correct temperature.
  3. Use sugar syrup between the layers if you’re not eating the cake straight away or storing in the fridge.
  4. Use unsweetened coconut milk for this recipe.
  5. To get perfect equal-sized layers, weigh each tin when it’s filled with batter.
  6. Dust your cake pans with flour after greasing. This will stop them from going really dark on the outside.
  7. This cake pairs well with my lemon curd recipe as a filling.

Make sure your flaxseed egg has thicked before you add it to your other liquids.

To achieve those perfectly even cake layers I weighed each cake tin with batter to approximately 380 grams.

Ingredients

Vegan Egg Replacer

  • 2 tbsp flaxseed
  • 5 tbsp boiling water

Dry Ingredients

  • 220 g vegan butter or margarine room temperature
  • 200 g caster sugar
  • 350 g plain all-purpose flour
  • 2 & 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 90 g desiccated coconut

Wet Ingredients

  • 175 mls unsweetened coconut milk (carton kind)
  • 100 mls water
  • 2 tsp vanilla bean extract

Instructions

  1. Preheat oven 150°C/302°F and line 3 x 6IN / 15.24CM cake tins with baking paper, grease with oil and dust with flour.


  2. Mix ground flaxseed with boiling water and mix together with a fork. Set aside so it can thicken.
  3. In the bowl of a stand mixer with a paddle attachment, cream together butter and sugar until creamy with no lumps.


  4. Sieve flours, baking powder, baking soda and salt in a small mixing bowl.

 Stir through the desiccated coconut.
  5. In a small jug mix coconut milk, water and vanilla together. Add thickened egg replacer and mix well.
  6. Add one-third of the flour mix very slowly and mix on lowest speed to the creamed butter, then add one-third of the liquid. Repeat until all ingredients are just combined. It will be a very thick batter.


  7. Pause mixer and scrape down sides and mix for a few seconds.


  8. Divide between tins, tap tins on the bench to release air bubbles, bake 36 to 39 mins, check with a skewer through the centre, if it comes out clean it’s ready.

 If you want perfect layers, weigh the cake tins with batter in them. It should weigh approximately 380 grams in each cake tin.
  9. Let cool in the tin for 5 minutes, then flip on a cake rake. Decorate with your favourite buttercream. You can also use my lemon curd recipe for the cake filling.
  • Prep Time: 20 minutes
  • Cook Time: 40 minutes
